Layer cakes are pretty, but I’m not a fan of the process of making them—especially when it comes to frosting and decorating! I’m all about fuss-free recipes, and so I have kept recipes simple here. None of these cakes require frosting, and though the cupcakes have frosting, they don’t require piping. All you do is slather the frosting on top and, if you like, top with some chopped nuts. Best of all, the frostings aren’t the ultra-sugary kind that you typically find mounded on top of cupcakes!
